{"id":840,"date":"2009-05-11T22:02:27","date_gmt":"2009-05-12T03:02:27","guid":{"rendered":"http:\/\/strangeaddiction.com\/?p=840"},"modified":"2011-07-13T15:11:44","modified_gmt":"2011-07-13T20:11:44","slug":"my-take-on-chicken-pasta-carbonara","status":"publish","type":"post","link":"https:\/\/strangeaddiction.com\/?p=840","title":{"rendered":"Pasta Girl&#8217;s Chicken Carbonara"},"content":{"rendered":"<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" title=\"Chicken Pasta Carbonara\" src=\"http:\/\/strangeaddiction.com\/wp-content\/uploads\/2009\/05\/chicpastacarb.jpg\" border=\"2\" alt=\"\" width=\"502\" height=\"382\" align=\"middle\" \/><\/p>\n<p><strong>Chicken Pasta Carbonara Recipe:<\/strong><\/p>\n<p>&#8211; Leftover or fresh Grilled Chicken (sliced or diced)<br \/>\n&#8211; Penne<br \/>\n&#8211; Procuitto (wafer thin Italian salami) or Pancetta (Italian smoked bacon)<br \/>\n&#8211; 1\/2 C Cream (or milk)<br \/>\n&#8211; 1-2 tbsp Butter<br \/>\n&#8211; S&amp;P to taste<br \/>\n&#8211; Parsley to taste (fresh or dried)<br \/>\n&#8211; 3 Egg yolks<\/p>\n<p>Pre-grill the chicken (seasoning it however you like) and dice or sliced it up. Set aside. Cook the penne in salted water to just before al dente. Reserve 1\/3 C of the starch water.<\/p>\n<p>Cut up the procuitto or pancetta into small chunks. Heat up a dry non-stick skillet or heat up a metal skillet with 1 tbsp of olive oil and add the chunks of pork to it. Cook for five minutes over med-low heat.<\/p>\n<p>Drop the heat and add the milk, starch water, S&amp;P, chicken and penne.
